What’s pink, red and white and says “I love you”?
My delicious Valentine’s Day salad. Giving yourself the present of yummy, healthy food is something we can do every day…not that I do. Usually, preparing food feels like a chore that takes me away from the things I think really deserve my attention. Nevertheless! Taking an extra few minutes to create a delicious and healthy meal that feeds your amazing body with nutrition is one of the best ways to say “I love you” to you. It shows respect and care.
Let’s riff on this for a sec: we make food for others because we want them to be healthy and strong and feel taken care of. But when it comes to ourselves, we’ll grab what’s quick. I’m so guilty of this! We can extend the wish of health, strength and care to ourselves! When I do take the time to chop, cook and exercise my culinary creativity, it relaxes me and ups the satisfaction factor. Plus, I’m usually surprised that it took less time than I thought it would.
Here’s the recipe for the AWESOME and ahem, heart-y Valentine’s Day salad I made for myself today. Take care of your body like this, and she’ll take care of you for years to come as well. Cheers!
Valentine’s Day Salad
- a bunch of spinach
- a bunch of green cabbage (you can also make this recipe without cabbage, using only spinach)
- 2 Roma tomatoes (diced)
- 2 hearts of palms (diced)
- 2 handfuls of strawberries (sliced)
- a handful of slivered almonds
- a handful of chinese crunchy noodles
- a generous amount of crumbled feta cheese
- sea salt and pepper
- balsamic vinaigarette
Combine all of the ingredients. Add salt and pepper to taste. (I like a fair amount of pepper.) Toss with the vinaigrette.
This salad with a piece of chocolate as a little dessert at the end is Valentastic! Enjoy!
